Chicken Salad with Eggs

“ This is the perfect light dinner or serve for company for brunch, it’s always a hit”

4 chicken breast, pre cooked (I bake mine with oil to keep the chicken moist and season) then skin and bone to make cubes
½ teaspoon black ground pepper
½ teaspoon celery salt
½ teaspoon garlic powder
¼-1/2 teaspoon onion powder
2 stalks of of celery, diced
3 green scallions or a red small onion, finely diced
½ teaspoon Dijon mustard
4 hardboiled eggs, diced
1 1/2 cups Mayonnaise, add more if needed (I use Helmans)


1) Bake, skin and debone the chicken, cut -up into cubes

2) Combine the chicken, celery, eggs, onion, mayonnaise, mustard and seasonings mix well.

3) Sprinkle the salad with paprika and place on a bed of butter lettuce or romaine, if you are going to serve in a bowl, chill the salad.

4) Chill the salad, serve with lettuce and tomatoes on fresh crusty bread or bun.

*You can cheat by buying a pre-cooked oven roasted chicken,
Sam’s Club or Costco make the best. Then I use some dark meat as well.
